Step 1/9

  • 600 g beef filet
  • salt
  • freshly ground pepper

Cut the filet into strips of 4 to 5 cm long and 1 cm wide. Season the strips of filet with salt and pepper.

Step 2/9

  • 300 g mushrooms

Clean the mushrooms. Only wash very briefly if necessary and dry thoroughly with kitchen paper. Cut the mushrooms into thin slices.

  • 1 onion

Peel the onion, cut in half and slice into rings.

Step 4/9

  • 5 tbsp clarified butter

Add the clarified butter to the AutoCook pan. Set the fry program, select medium, set 160°C with the temperature selector and press Start.

Step 5/9

Divide the strips of filet into four portions. With the lid open, fry each portion for about 30 seconds on each side. The filet strips need to be slightly raw on the inside. Remove each portion of meat with the spatula and place on a warm plate.

  • 2 tbsp flour

As soon as all the strips of meat have fried and are placed on the plate, add the onion and mushrooms to the AutoCook pan, dust with a little flour and fry with the lid open until the signal sounds.

Step 7/9

  • 150 ml vegetable stock
  • 200 ml cream
  • 3 cl cognac (according to taste)
  • salt
  • freshly ground pepper

Then add the vegetable stock, cream and cognac. Mix well and season with salt and pepper. Close the lid.

Step 8/9

Set the cooking program, select short and press Start.

  • mashed potatoes and picked gherkins as side dishes

As soon as the signal sounds, open the lid. Stir in the meat straight away. Allow the meat to rest in the sauce for a short time and heat up. Season the beef stroganoff with salt, pepper and some more cognac (according to taste). Serve with mashed potatoes and picked gherkins.
